- Typical Apulian focaccia pan made of sheet iron, resistant to high temperatures.
- Upper diameter Ø 35 cm, lower diameter Ø 32 cm.
- Iron pans are sold pre-oiled to prevent rust. Iron pans are not non-stick; they require a "searing" treatment, which can also be done in a home oven.
- To remove the grease from industrial oil, bake at 150°C (300°F) for about 30 minutes, let it cool, and then wipe it thoroughly with a clean cloth or paper towel. Only after this can you proceed with searing the iron pan. Preheat the oven to its highest temperature (about 250°C (480°F). Lightly brush the entire pan with oil, taking care not to leave any stains, and bake for about 30 minutes. After this time, remove it from the oven and let it cool completely.
- Grease again with oil and bake for a second time at a high temperature for another 30 minutes. Let it cool and then dry thoroughly with paper towels. The pan will change color. If you want to avoid smoke in your home, you can take it to a trusted bakery.
- NB: For the maintenance and cleaning of the pan, washing with soap and water is not recommended, in order to avoid the formation of rust on the surface of the pan.
